Serves 2
Ingredients
1 C cooked quinoa
1/4 Red cabbage
1 Jalapeno, sliced
1 med. Carrot (sliced)
1/3 English Cucumber, sliced
1/4 C Roasted peanuts
1/2 small Yellow or red bell pepper
1/3 cup Cilantro, chopped
2 Green onions, chopped
1 lb marinated pork, chicken or beef… grilled or baked
Dressing
1 Tbl grated ginger
1 garlic clove, chopped
2 T soy sauce
2T maple syrup
3 T lemon juice
1 T sesame oil
2 T olive oil
1/4 t cayenne pepper
1/4 t salt
Optional: squeeze of lime at serving
Marinade
2 T soy sauce
1/4 c hoisin sauce
2 T Chinese pepper sauce
2 garlic cloves
1 T grated ginger
2 T brown sugar
Directions
1. Marinate meat in bag at least two hours
2. Bake or grill meat
3. Prep quinoa. Brown slightly in skillet. Let cool. Rinse quinoa in water. Bring quinoa to boil with 1 1/4 cup of water with 1/2 tspn salt and 1 T butter. Once boiling, cover, reduce heat to low for 20 minutes. After 20 minutes turn off heat. Place kitchen towel over pan and place lid on top.
4. While quinoa is cooking prep veggies
5. Then prep dressing by combining all ingredients in a jar and shaking.
6. Slice meat
7. Combine quinoa, veggies and meat. Toss with dressing. Squeeze lime juice over top.
