Ingredients

8 oz rotini pasta

2 T olive oil

1 T butter

12 oz Italian sausage (about two to three links)

1/2 medium onion, small diced

1/8 red pepper flakes (add another 1/8 for added spice)

1/cloves, diced

1 lb broccolini, trimmed

1/2 white wine (dry)

1 lemon, zested, and juiced

3/4 cup grated parmigiana, divided

1/4 cup grated pecorino romano

Salt and pepper to taste

Directions

1. We’re going to cook pasta and remaining ingredients simultaneously

2. Prep pasta according to package instructions

3. Meanwhile, over medium high heat, add olive oil and butter in a large skillet.

4. Cook sausage, red pepper flakes, and onions until just brown.

5. Add garlic and sauté for thirty seconds.

6. Deglaze pan using the white wine and turn down heat.

7. Reserve 1 cup of the pasta water

8. When pasta has 2-3 minutes remaining reserve one cup of the pasta water and add broccolini to cooking pasta

9. Add lemon zest and lemon juice to the skillet

10. When pasta is al dente drain the pasta and broccolini, then add it to the skillet.

11. Add 1/2 cup of the parmigiana and the pecorino

12. Combine all ingredients, adding about 1/3rd cup of the reserved pasta water… add additional pasta water if mixture looks too dry… sauce should be slightly thickened and thoroughly integrated with the pasta

13. Serve in a bowl, sprinkled with additional parmesan.
