This recipe follows the concepts established in the Never Fail White Rice recipe. This version is flavorful and fluffy! It goes great alongside your favorite enchiladas, tacos, or fajitas.
Serves 6 to 8
Time: 45 minutes
Ingredients:
1.5T butter
2 T olive oil
1.5 c rice
2 c chick stock
1/2 chopped onion
1 t garlic powder
1 t Chile powder
1/2 t oregano
1/2 t cumin
1 can fire roasted tomatos
1/2 lemon juice
Salt pepper to taste
1/2 c chopped cilantro
Rinse rice until water is clear.
Sautée onion in butter and olive oil until onions are tender. Add rice and cook for 5 min stirring on occasion.
Add remaining ingredients and bring to boil. Cover and simmer for 18 min.
Off the heat place a dish towel over pan, (do not stir) replace cover and let steam for 15 minutes.
Fluff rice before serving.
(FYI: makes a great breakfast. Reheat the rice in the microwave and top with one or two soft fried eggs!)
