This is the best recipe if you’re looking for a light, fluffy rice!

Serves 6 to 8
Time: 45 minutes

Ingredients:
2 cups long grain white rice (basmati is my favorite)
1 tablespoon butter (unsalted or salted)
3 cups water
1 teaspoon salt (kosher or table)

Place rice in a fine mesh strainer and rinse under cold water until water runs clear (to get rid of extra starch). Place strainer over bowl to drain for a few minutes.

Heat butter in a large saucepan over medium heat. Add rice and cook, stirring constantly, until grains become “chalky” and fragrant, about 2 to 3 minutes. Add water and salt, increase heat to high and bring to a boil, stirring to combine ingredients. Reduce heat to low, stir one last time, cover, and simmer until all liquid is absorbed, about 18 minutes. Off the heat, remove the lid and DO NOT STIR. Place the lid on a folded, clean kitchen towel, gather the towel around the lid and place it back on the saucepan. Let stand 10 to 15 minutes. When ready to eat, remove lid and fluff rice with a fork.
