Ingredients:

2 lobster tails (~6 oz. each)
8 Tbl (1 stick) melted salted butter (divided use)
Lemon wedges

Prepare lobster for cooking…
Using kitchen scissors cut down the top of the shell, stopping at the base of the tail. Pull open the shell and gently separate the meat from the sides and bottom of the shell. (I use a surgical glove and my index finger.) Pull the meat above the shell and close the shell underneath so the lobster tail is resting on top of the shell with the meat still attached at the base of the tail.

Preheat the broiler with the rack about 8” from the broiler.

Place the tails on a rimmed baking sheet covered in parchment paper or aluminum foil (easier clean up) and put a generous tablespoon or 2 of melted butter over each tail. Broil for about 4 minutes. You’re looking for the shells to turn bright colored and the flesh to turn opaque. Be careful not to overcook or meat will be tough.

Serve with more warm melted butter in ramekins with lemon wedges.
