This salmon is baked in foil…. quick, easy and delicious! Serves 4.

Prep time: 10 min. Cook time: 15 min. Total time: 25 min.

Ingredients:
1 1/2 pound sockeye salmon (preferably wild)
2 tablespoons lime juice + zest from one lime
2 teaspoons honey
1 clove garlic, minced
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
2 tablespoons unsalted butter, cubed
1/2 teaspoon cumin powder
1/2 teaspoon chipotle chili powder
1 tablespoon cilantro, chopped (optional)

Preheat oven to 375 degrees (F) with rack in center position.

In a small saucepan over medium heat, combine the lime juice, honey, garlic, red pepper flakes, and salt. Allow the mixture to reduce to 1 tablespoon. Add the butter 1 tablespoon at a time, removing pan from heat and swirling to melt. When butter is completely melted, remove from heat.

Mix the lime zest, cumin and chili powder together in small bowl.

Rinse the salmon and pat completely dry. Place the salmon on a piece of foil that has been sprayed with cooking spray (heavy duty if you have it, large enough to wrap around filet). Spoon the lime butter mixture over filet, and then sprinkle with chili mixture. Seal the fish tightly in the foil.

Place the salmon in preheated oven, and bake 12-14 minutes or until firm. Turn oven to broil. Open the foil and broil for 1-2 minutes to get a little color on the salmon. Keep an eye on the fish so it doesn’t burn. Remove from oven and top with cilantro, if using.
