This is such an easy recipe, and can be easily adapted to the number of servings you want and the type of fish you have. My preference is a white fish, such as tilapia or cod fillets. A cast iron skillet is best, but a nonstick skillet will work.

Prep time: 5 minutes
Cook time: 6-10 minutes depending on thickness of fish

Ingredients:
Fish fillets
Essence of Emeril (or any other type of blackened seasoning)
Butter (about a tablespoon per serving)
Lemon wedges, for serving

Generously coat both sides of the fish with the blackened seasoning. Heat the skillet over medium high heat and add butter. Once butter is melted and bubbling, add the fish fillets and cook about 3 minutes (fish should appear dark, but not burned… this is the toasted spices). Flip and cook an additional 3 minutes. The time will depend on the thickness of fish. Spoon any pan juices over the fish and serve immediately with lemon wedges.

Suggestions: Serve with rice and green beans or salad. Also, great for fish tacos served with mango salsa and sliced avocado.
