The recipe on most quinoa packages yields a product that is a sticky mess. This recipe follows a simple method akin to our Never Fail White Rice recipe. The result is a light and fluffy quinoa that is great as a side dish or in a green salad.

Ingredients

1 cup dried quinoa

1 1/2 cup chicken stock or water

pinch of salt

Directions

Place quinoa in a heavy pot. Over the stove, roast the quinoa until fragrant, stirring occasionally. When roasted, remove to a bowl. Add stock or water and salt to the pot. Bring the liquid to a boil. After the liquid boils, add quinoa back to the pot. Cover the pot and reduce the heat to low. Cook for 18 minutes. After cook time, turn off the heat, remove lid, and place a kitchen towel over the pot. Place the lid over the kitchen towel for at least five minutes. After five minutes, quinoa is ready or can be held pending preparation of other dishes.
