Ingredients
6 – 9 lbs pork shoulder
2/3 cup salt
1/3 cup ground pepper
Directions
Combine salt and pepper and apply to washed pork shoulder.
Cook pork shoulder, preferably in smoker, at 250f to 300f for about 4 hours… until internal temp is about 160F.
When pork shoulder reaches 160F double wrap in foil, add about 4-6 oz of Apple juice, seal the foil, then place back on smoker.
Maintain smoker heat and cook until internal temp is 200F to 205F.
Let rest for at least 15 minutes then shred with fork.
Combine with BBQ sauce for sandwiches or use as fillings for tacos, enchiladas, quesadillas, Chile rellenos or add to stews or soups.
