Rest time: At least 30 minutes

Ingredients:
1 Mango
1 Serrano pepper
3 tablespoons purple onion, finely diced
1/4 cup chopped cilantro
1/4 teaspoon kosher salt

Peel and dice mango into 1/2″ pieces and place in a bowl (you should have about 1 1/2 cups). Finely chop the pepper and add to the mango. (Note: if you like it spicy, leave the seeds and ribs in) Add onion, cilantro and salt. Stir and taste for seasoning. Cover and refrigerate at least 30 minutes to allow flavors to come together.

Serve with fish tacos.
