This is T1’s favorite pie. Use Possessive PJ’s Pie Crust.
This is also a favorite of our dog Willie. In his younger days, Willie could climb onto the table if no one was looking and help himself to the pie.
Preheat the oven 425f then reduce to 400f when baking for 10-12 minutes
Ingredients
Filling
1 c sugar
1/2 c corn starch
1/4 t salt
4 egg yolks
21/4 c water
3 T butter
2 lemons zested and squeezed for a 1/2 cup of lemon juice
Filling Directions
Place sugar, corn starch and salt on a pan over med. heat… add zest then water… stir constantly til thicken
Temper egg yokes and add to pan bring back to boil. Remove from heat and add butter and lemon juice. Pour into pie crust
Meringue Ingredients
4 egg whites
Punch salt
1/2 t vanilla
4 T sugar
Meringue Directions
Using a mixer, beat egg whites with the wire whisp. While mixing add sugar in one tablespoon increments, allowing the meringue to incorporate the sugar. Add salt and vanilla as mixing is completed. Arrange the meringue over the top of the lemon filling.
Bake at 400 for about 10-12 minutes
