Ingredients
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup of unsalted butter (one stick), softened
2/3 cup sugar, plus more for the top of the cake
2 eggs
1 teaspoon vanilla
3 tablespoons dark rum
2 Granny Smith apples, peeled and cut into 1/2″ pieces
Instructions
Preheat oven to 350 degrees (F) with rack in the center position. Grease a deep-dish cake pan, or 9″ springform pan with cooking spray. Line the bottom of the pan with parchment paper and spray with cooking spray.
Combine the first four (dry) ingredients in a bowl and set aside.
In a separate bowl, cream the butter and sugar together until creamy, light and fluffy using a hand mixer (or whisk attachment if using a stand mixer). Add the eggs, one at a time, mixing well after each addition. Beat in vanilla and rum. At low speed, add the flour mixture until just combined. Scrape sides with a spatula, and then fold in the apples
Pour the batter into the prepared pan. Sprinkle additional sugar (about a tablespoon) over the top of the cake. Place cake in preheated oven and cook for approximately 40 to 45 minutes until a toothpick inserted comes out clean.
Place cake on a wire rack to cool for about 5 minutes before removing from pan.
