Ingredients
3/4 C all-purpose flour
1 T sugar
1 T salt
2 eggs (beaten)
3 T melted butter
3/4 C milk
Directions
Combine all ingredients… being sure to only mix in 1/2 of the milk until all flour lumps are dissolved. Add remaining milk when the batter is beaten smooth. The batter should be very thin… add water as needed to thin the batter.
Cook in a non-stick pan.
Serve with apricot jam or use in a main dish for wrap-around filling.
