Ingredients:
1/2 cup canola or vegetable oil
1/2 cup brown sugar, firmly packed
2 eggs, beaten
1 cup milk (preferably whole, but any will work)
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoons baking powder
3 cups old fashioned oatmeal (not quick cook)
1/2 cup chopped nuts, walnuts or pecans
1 banana, diced
1 cup blueberries

Preheat oven to 350 degrees(F).

In a large bowl, whisk together oil, brown sugar and eggs (breaking up any clumps of brown sugar).

Add milk, vanilla, cinnamon, salt and baking powder, and whisk to combine.

Add oatmeal and nuts.

Finally, fold in banana and blueberries.

Pour into a 2 quart baking dish that has been sprayed with cooking spray. Bake 30-35 minutes, or until set.

Serve with warm milk, if desired.
