Ingredients:
12-16 pound brisket
2 T vegetable oil
1/3 cup kosher salt
1/3 cup pepper
1 1/2 T ancho chili powder
1 cup brewed black coffee

(Rubber gloves recommended for prep…)

Instructions:

  • trim brisket
  • oil brisket
  • mix salt, pepper, chili powder
  • rub mix on brisket
  • wrap brisket in plastic wrap and place in refrigerator for 8 hours to overnight
  • prep grill or egg to a temp of 180f
  • place brisket on grill, fat side down, and insert a temperature probe. Cook for about 8 to 10 hours until probe reads 160f.
  • place brisket in foil and pour brewed coffee over brisket
  • raise heat on grill to 225-250f
  • seal the foil, place back on grill and cook until internal temperature reads 205f… about 3-4 hours
  • place brisket in cooler and hold for at least 2 hours… brisket will keep warm in a cooler for about 6 hours.
