This is easy and delicious dessert that is a family favorite. Substitute almost any kind of fresh or canned fruit or berries… blackberries, raspberries, cherries, apricots…
Ingredients
1 cup flour
1.5 t baking powder
1.5 cups sugar
1 pinch salt
1 stick unsalted butter, melted
1 t vanilla
1 cup milk
24 oz canned peaches (two cups fresh berries, cherries…)
2 T Turbinado (or course sugar) (regular fine sugar will do as well)
Directions
Preheat oven to 350f
Melt butter
In a medium bowl combine flour, sugar, salt, milk, and vanilla. Mix just until combined.
Add melted butter.
Grease 3 quart baking dish with butter or cooking spray.
Pour the batter into a the baking dish.
Distribute fruit over the top of the batter. Adding peach syrup is optional.
Bake for about 1 hour, until golden brown.
With about 10 minutes remaining, sprinkle sugar over the top of the cobbler.
Serve with a scoop of vanilla ice cream.
