So easy I’m almost embarrassed to add it, but it is so good! Great for an easy weeknight meal, or on a cold day. Great leftover too!

Cook time: 1 hour 10 minutes
Serves: 6

Ingredients:
2 pounds ground beef
2 packages taco seasoning (1/2 cup, if using bulk)
2 packages Original Ranch dressing mix
12 ounce bag of frozen corn
2 can pinto beans
1 can Rotel (whatever spice level you prefer)
Tortilla chips, for serving
Cheddar or mexican blend cheese, shredded for serving
Avocado, diced (optional)
Lime wedges (optional)

In a dutch oven or large pot, brown meat and drain excess fat, if any. Add the taco seasoning and ranch mix to meat and cook about 30 seconds. Add the corn, pinto beans and rotel, and stir to combine. Add enough water to cover all the ingredients by about 1/2″ and bring to a boil. Lower heat to a simmer and cook for about an hour, stirring occasionally so it doesn’t stick to the bottom. (Can be eaten after 30 minutes, but an hour is better to let flavors develop.)

To serve, place a few broken chips in bottom of bowl, ladle soup over the chips and top with cheese. Add diced avocado and a squeeze of lime.
