This is a simple and delicious dressing for any green salad…. love it on arugula with shaved parmesan, or even add cubed, cold watermelon.

Ingredients:
1/4 cup fresh squeezed lemon juice
1/2 cup extra virgin olive oil, good quality
1 teaspoon kosher salt
1/2 teaspoon black pepper

Put all ingredients in a “ball” mason jar and shake well until combined.
*This can be made in any quantity, larger or smaller…. one part lemon juice to two parts oil, and adjust salt and pepper. Keeps well in the refrigerator for several weeks.
