Ingredients:
2 bartlett pears
4 Tbl sugar
1/2 tsp cinnamon
2 Tbl lemon juice
1/4 cup water
2 Tbl butter, melted
1 sheet frozen puffed pastry, thawed
1/4 cup dark rum (optional)
Vanilla ice cream
Preheat oven to 375 degrees(F).
Peel, halve, and core the pears. Place 1/2 pear cut-side down in a ceramic dish that has been sprayed with cooking spray. Pour lemon juice over pears. (Optional: pour 1 tablespoon of dark rum over each pear). Put a tablespoon of water around base of pear (this will help to steam and soften the pear).
Combine the sugar and cinnamon in a ramekin. Sprinkle half of the mixture over the pears.
Cut the puffed pastry into 4 equal pieces and place one piece over each pear. Brush puffed pastry with butter. Sprinkle the remaining sugar/cinnamon mixture over pastry.
Bake for 30 minutes, until the pastry is golden brown. Serve warm with a scoop of vanilla ice cream.
