I spent a month or so trying different recipes. This one hit the spot after I adjusted for shallot and Dijon proportions.
Yield: 1 Cup
Ingredients
2/3 cup olive oil
1/4 cup champagne vinegar
2 tablespoons lemon juice
1 tablespoon honey
2 teaspoons Dijon mustard
1 tspn shallot, finely minced
1/4 teaspoon salt
1/8 teaspoon pepper
Instructions:
Combine all ingredients in a glass jar. Shake well and serve.
(This recipe can be readily halved.)

Mixed greens
Walnuts
Goat cheese
Chopped apple or figs
Chopped dried cherries
